Pour marinade of choice over steaks and place overnight in the refrigerator to tenderize the meat. Remove the steak from the refrigerator one hour before cooking to allow the meat to return to room temperature. Heat a heavy skillet over medium heat for four minutes. Season both sides of the steak with salt and pepper. Fry the steak in the pan with a lid on top. Turn the steak only once. For a one-inch steak cooked medium, it should be done in 6 minutes. Remove the steak from the pan. Let it rest for five minutes. This will allow the juices to flow from the center to the exterior, resulting in a juicy and delicious steak.
